We caught up with founder and Operations Director Kim Maher to find out what makes Cheeky Chilli so damn hot…!
Kim we are hearing amazing things about Cheeky Chilli; what makes you guys so different?
“I think it’s the combination of skills really. Phil my business partner is an acclaimed chef who has worked all over the world and ran his own hugely successful restaurant here on the Wirral, The Marsh Cat in Parkgate. His passion for food and knowledge about global cuisines is quite infectious and he has filtered this into our menus and overall approach.
“I have spent over 20 years at the cutting edge of event management and worked for some of the region’s top venues so understand all the pressures of creating amazing events for a wide range of clients.
“Our team are young, driven and all 100% committed to the Cheeky Chilli way and so we all have the same passion and approach.”
You are definitely more than just event caterers. What is so different about your service?
“Well firstly we have sole supplier status with some of the region’s leading venues – we only work with the best and so our couples are usually on the lookout for something spectacular. All our venues are very different, from the grandeur of places like Delamere Manor and Talhenbont House in North Wales to the magical surroundings of Cheshire Woodland Weddings and Thurstaston Country Park we can really tailor our offering to suit the overall style and theme of the day.
“We like to work with our clients on the whole event end-to-end and can advise on everything from Venue dressing to transport – its all down to how much input they need.
‘The number one thing for us is to make the food the star of the show and take away as much stress as possible for our clients’
So what are the hot food trends for 2021/22?
“More relaxed Street food style feasts are still hugely popular. Phil loves this style of food as it takes him back to his youth training in the foodie melting pot of New Orleans!
“Picnic style weddings are also becoming super-popular and we do an amazing range of afternoon tea inspired wedding breakfasts which are really beautiful and a bit different.
“Obviously, some couples still want a traditional lunch with canapés and three courses which we love. We can still add some Cheeky Chilli flair with some cool canapé choices and more unusual mains options to give the food the WOW factor.”
“Also watch out for seasonable, sustainable wedding choices. Lots of our couples want to use local ingredients which are in season, so Chef and Phil and the team have been working hard to devise some really interesting seasonal dishes using all the amazing produce we have here on Wirral and our surrounding counties like Cheshire, Lancashire and North Wales. Our Naked Anglesey Mussel Starter shots in a white wine and cream sauce are off the scale and make the best use of some of the wonderful seafood that surrounds our local shores.”
